Preparation Steps :
Step 1: Prepare the Smoker
Set up your smoker for indirect cooking at 225-250°F (107-121°C). Add wood chips or chunks to create smoke. Hickory provides a strong flavor, while apple or cherry gives a milder, sweeter taste.
Step 2: Prepare the Sausages
If using the marinade, combine all marinade ingredients in a bowl and let sausages marinate for 30 minutes to 2 hours in the refrigerator. Remove sausages from refrigerator 30 minutes before smoking to bring to room temperature.
Step 3: Prepare Vegetables (Optional)
Toss sliced onions and peppers with olive oil, salt, and pepper. These can be smoked alongside the sausages.
Smoking Process :
Phase 1: Initial Smoking (45 minutes)
Place sausages on the smoker grates, ensuring they're not touching each other. Maintain temperature at 225-250°F. Add vegetables in a foil pan if using.
Phase 2: Monitoring and Spritzing (30-45 minutes)
After the first 45 minutes, begin spritzing sausages every 30 minutes with water or apple juice to prevent drying. Continue smoking until internal temperature reaches 160°F (71°C) for pork sausages or 165°F (74°C) for chicken sausages.
Phase 3: Final Crisping (15 minutes)
For the last 15 minutes, increase smoker temperature to 300°F (149°C) to crisp the casing. Watch carefully to prevent burning.

Internal Temperatures:
Chicken/Turkey Sausages: 165°F (74°C)
Beef Sausages: 160°F (71°C)
Smoker Temperature:
Low and Slow: 225-250°F (107-121°C) for most of the cooking
Final Crisping: 300°F (149°C) for last 15 minutes
